Harvested during the rainy season from Zambia's Miombo trees, this honey is darker, richer, and more intense.
Why it's dark:
During the rains, Miombo trees such as Brachystegia, Julbernardia, and Isoberlinia produce mineral-rich nectar and honeydew. The high moisture levels and dense forest vegetation result in nectar with higher mineral and antioxidant content, giving the honey its deep amber to dark brown color and bold, malty flavor.

Harvested during the cool, dry winter months, this honey is light golden, smooth, and delicately floral.
Why it's golden:
In winter, flowering shifts to lighter-nectar-producing plants and shrubs. Reduced humidity and slower crystallization allow bees to produce honey with lower moisture content, resulting in a cleaner, brighter color and a mild, naturally sweet taste.
